Easy Shredded Chicken Verde

Easy Shredded Chicken Verde (Green Sauce, Tomatillo Salsa) Serve in a bowl or in tacos with a toppings bar and rice.

This easy one-pot meal is great for a family dinner or you can increase the ingredients for a crowd. I like to make it and set up a toppings bar for everyone to build their own bowl. This is helpful on a week night when everyone is dashing home from a busy day or last minute guests call to say the are “in the neighborhood and want to stop by…” No sweat. Most likely you have some of the ingredients on hand or in the freezer.

Recipe

2 lbs Chicken breast (on or off the bone)

2 - 10 oz Jars of Tomatillo, Green Salsa

1 - Dried Guajillo Pepper (Optional) Adds a depth of flavor

Combine all ingredients in the InstaPot/Pressure Cooker.

Select Pressure and time for 50 minutes. If using frozen chicken increase time.

Follow instruction for your pressure cooker.

When your chicken is cooked, remove from pot and shred in a serving dish and cover with green sauce. Serve with rice and toppings.

Cheese, shredded blends, cojita cheese

JalapenS, pickled or fresh

Sour cream or Mexican cream

Pico de gallo, assorted salsas
